Chocolate crinkle cookies

Serves 48

This classic chocolate cookie recipe gets a healthy makeover with less sugar and whole wheat flour. A dusting of powdered sugar on these chocolate crinkles makes them a nice holiday treat.

Ingredients

4 oz bittersweet chocolate, coarsely chopped

1/2 cup safflower oil

1/2 cup granulated sugar

2 tsp vanilla extract

1 egg

2 egg whites

1 cup all-purpose flour

1/2 cup whole wheat flour

1/8 tsp salt

1/2 tsp baking powder

1/2 cup confectioners' sugar

Preparation

In a microwave-safe bowl, microwave chocolate on high for 20 seconds, stir and continue to microwave at 10-second intervals until melted.

In a large bowl, mix the chocolate, oil, granulated sugar and vanilla. Stir in the egg and egg whites. In another bowl, combine the flours, salt and baking powder. Add the flour mixture to the chocolate mixture and stir until combined. Cover and refrigerate for at least three hours or overnight.

Preheat the oven to 350 degrees. Lightly coat baking sheets with nonstick cooking spray.

Roll the dough into 3/4-inch balls. Place confectioners’ sugar in a shallow bowl. Roll balls of dough in sugar to coat. Place about 2 inches apart on baking sheets. Bake for 10 to 12 minutes or until springy to the touch. Immediately transfer to a wire rack to cool.
