Green goddess salad

Crisp romaine lettuce and vibrant red cabbage are dressed in our flavorful Green Goddess Dressing for a delicious, nutrient-rich salad. This beautifully fresh and verdant recipe is perfect for a quick and easy weekday lunch or a healthy accompaniment to a main course.

Ingredients

Salad

4 cups chopped romaine lettuce

2 cups shredded red cabbage

3 Tbsp chopped fresh dill

2 Tbsp freshly squeezed lemon juice

1 tsp cracked black pepper

1/4 cup raw roughly chopped cashews

Green Goddess Dressing

2 garlic cloves, minced

1/2 shallot, roughly chopped

1 1/2 lemons, juiced

1/4 cup olive oil

1/2 cup fresh spinach

1/2 cup fresh dill, roughly chopped

1/2 cup chives, roughly chopped

1/2 green onion, roughly chopped

3 Tbsp nutritional yeast

1/2 cup raw unsalted cashews

1/2 tsp Kosher salt

Preparation

Salad

In a large serving bowl, add the romaine, cabbage and dill; toss to combine. Add the lemon juice and black pepper and toss to combine.

Green Goddess Dressing

Add all of the ingredients in a blender or food processor and blend until smooth. If the dressing is too thick, add 1 tablespoon at a time of warm water until you reach the desired consistency.

Add the dressing to the salad mixture and toss until well combined. Gradually sprinkle in the cashews and lightly toss to incorporate evenly. Serve immediately. Store the remainder of the dressing in an airtight container for up to 1 week.
