Mint Iced Tea

Cool and easy, this simple iced tea recipe has 6 ingredients that will give you just enough sweetness and a whole lot of refreshing flavor. If you can't find lemon verbena leaves, drop in a few fresh lemon slices instead.

Ingredients

  • 8 cups boiling water
  • 1 Tbsp loose Chinese green tea
  • 25 fresh mint sprigs, plus additional for garnish
  • 1/4 cup sugar
  • 3 lemon verbena leaves
  • Lemon slices, for garnish

Preparation

  • In a heatproof pitcher or a teapot, combine the boiling water and tea leaves. Cover and steep the tea for 3 to 5 minutes.
  • Strain the tea mixture through a fine sieve into a bowl, and discard the tea leaves.
  • Add the mint and steep for 5 minutes. Remove the mint leaves. Add the sugar and stir until the sugar dissolves. Add the lemon verbena leaves. Cover and refrigerate for at least 3 hours, or until completely cooled. Serve over ice, garnished with lemon slices and mint sprigs.
